Endive and pear grilled cheese sandwich

  • 454 g (1 lb) of endives
  • 1 pear, thinly sliced
  • 5 ml (1 tsp) lemon juice
  • 8 slices whole wheat bread
  • 30 ml (2 tbsp) butter at room temperature
  • 8 slices Cheddar or Oka cheese
  • Salt and pepper to taste


  • Preheat panini grill or large skillet on medium heat.
  • Thinly slice the endives and remove the base.
  • In a large bowl, combine endives, pear, lemon juice, salt and pepper. Set aside.
  • Butter bread slices on one side only, then lay on work surface butter-side down. Top each with a slice of cheese and endive-pear mix. Make into sandwiches.
  • Transfer to panini grill and toast 5 minutes. If using a skillet, cook 2-3 minutes per side.


You can replace the pear with an apple and/or add precooked bacon.
